Chickpea-Based Blondies with a Twist 🌱🥄
Ingredients:
- 1 can (400g) chickpeas, drained and rinsed
- 1/2 cup peanut butter
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup oat flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup dark chocolate chips
Directions:
1. Preheat oven to 350°F (175°C) and line a baking dish with parchment paper.
2. Blend chickpeas, peanut butter, maple syrup, and vanilla until smooth.
3. Mix in oat flour, baking powder, and salt until combined. Fold in chocolate chips.
4. Spread the batter evenly into the baking dish.
5. Bake for 20–25 minutes until firm and golden. Cool completely before slicing.
