Protein Cookies
Ingredients:
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup rolled oats
1/2 cup almond flour or oat flour
1/2 cup vanilla or chocolate protein powder
1/2 cup natural peanut butter or almond butter
1/4 cup honey or maple syrup
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
1/4 cup dark chocolate chips (optional)
2 tablespoons chopped nuts or seeds (optional)
Directions:
Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the rolled oats, almond flour, protein powder, baking soda, and salt. Stir to mix evenly.
Add the peanut butter, honey (or maple syrup), applesauce, and vanilla extract to the dry ingredients. Mix until a thick dough forms.
If desired, fold in the dark chocolate chips and chopped nuts or seeds for extra texture and flavor.
Scoop tablespoon-sized portions of dough onto the prepared baking sheet, flattening slightly with the back of a spoon.
Bake for 8-10 minutes, or until the cookies are lightly golden around the edges.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
